Caseificio Gelmini
A creamy, whole-milk goat blue cheese produced with only whole goat milk. The milk is pasteurized, curdled with calf rennet and added with starters and fungal spores. It is a medium-aged and highly digestible cheese with characteristic that are typical of goat milk. Its paste is white and extremely creamy with generally green linings typical of blue cheeses, characterized by a delicate goat cheese flavor.
