Truffle blue cheese is made from whole, pasteurized cow milk curdled at 28-36°C with calf rennet, starters and fungal spores, with the addition of ground summer truffle. It is a soft, raw-paste fatty cheese (min. 48% ss) with medium ageing and inedible rind.

CHARACTERISTICS

Our blue cheese with truffle is produced with only highly-certified, controlled Italian milk. Its nutritional properties combine with the typical characteristics of our blue cheeses: rich in vitamins, they are gluten free and naturally lactose free, with a lactose content of less than 0.1 g/100 g, as a natural consequence of the typical production process .
